The basis of all rums is the sugar cane, which belongs to the grass family and can grow up to 4 meters high. After the maturing period of approx. 15 months, the sugar is only crystallized out of the lower two-thirds of the plant, leaving the syrupy molasses. Very rarely, rum is also made from fresh sugar cane juice. Production takes place in the Caribbean, Central and South America, but also in other countries such as the Philippines, Australia, India, Cape Verde and other countries. Bacardi is still the world's largest producer of rum.
