Production area: Sessantanni valley, about 40 hectares between San Marzano and Sava (TA). High temperatures, little rain and high thermal differences have a positive impact on the quality of the grapes. It is the classic cultivation area of the DOP Primitivo di Manduria.
Type of soil in the vineyards: Red, fine soil with a limestone substrate and rare rocky areas. The famous red color of this soil can be attributed to iron oxide deposits
Harvest time: mid-September
Fermentation: hand picking of the slightly overripe berries; Temperature-controlled maceration for 24-48 hours at 8°C, alcoholic fermentation on selected yeasts at 24-26°C for 10 days. Racking with light pressing.
Aging: Malolactic fermentation in steel tanks and subsequent aging in French and American oak barrels for a period of 12 months
Serving temperature: 18°C.
