Fermentation: The grapes are picked by hand and placed in small baskets. Destemming, pressing, cold maceration at 8°C and subsequent fermentation at a constant temperature between 24 and 26°C. Racking with gentle pressing
Aging: Malolactic fermentation in steel tanks and subsequent aging in French and Caucasian oak barrels for a period of 12 months
Serving temperature: 18°C.
