Highland Park is based in Kirkwall on the island of Mainland, north of Scotland, the largest of the Orkney Islands, making it the most northerly Scottish whiskey distillery. The name "Highland Park" does not refer to its location in the Highlands, but indicates that it stands on an elevated area on the Mainland known as "High Park". As one of the few whiskey distilleries, Highland Park still has its own malting with traditional "floor maltings". Here the barley is malted and given a phenol content of around 20 ppm by the peat-fired kilns. The peat required for this comes from Hobbister Moor, which stretches a few kilometers south-west on Mainland. The water comes from the Cattie Maggie spring. The resulting peated barley is blended with unpeated barley from the Scottish Highlands and distilled in two wash stills and two spirit stills. Annual production is around 2.5 million liters, making Highland Park one of the larger distilleries in Scotland.
